Ingredients

  • 100 g Light Brown Sugar
  • 100 g Demerara Sugar
  • 250 g Butter
  • 5 tbsp Maple Syrup
  • 350 g Rolled Oats

Method

  1. Preheat the oven to 180ยฐc (160fan/ 350F) and line a 20cm square baking tin with baking paper.
  2. Melt the butter, sugars and maple syrup together in a heavy-based pan over a medium heat.
  3. Mix in the rolled oats with a wooden spoon. Make sure all the oats are coated in the melted butter and syrup mixture.
  4. Pour the flapjack mixture into the lined baking tin and pack down firmly with the back of a wooden spoon.
  5. Bake in the oven for 25 minutes until light golden brown. Leave to cool for 10 minutes before scoring the top into bars with a sharp knife (be careful not to go all the way through, it will still be very soft). Cool completely (overnight if possible) before cutting into bars
