Ingredients
- 1 tbsp Sesame oil
- 3 Shallots (chopped)
- 1 Garlic clove (chopped)
- 1 Orange Pepper (chopped)
- 300 g Cooked Rice
- 2 Eggs (beaten)
- 2 tbsp Soy Sauce
- 100 g Peas (frozen)
- 100 g Cooked Smoked Sausage (sliced)
- 200 g Cooked Chicken (chopped)
- Β½ tsp Salt
- ΒΌ tsp Black Pepper
Method
- In a large wok or pan, heat the sesame oil, then stir-fry the shallots, garlic and peppers on a medium high heat for a couple of minutes.
- Add the cooked rice and stir fry for 2 minutes. Keep stirring so the rice doesn't stick to the pan.
- Add the beaten egg and fry for 2 minutes until the egg is cooked. Then spoon in the soy sauce.
- Add the frozen peas and stir until cooked (they will cook very quickly in just a few minutes).
- Finally, add the chopped smoked sausage and cooked chicken, and heat through until everything is piping hot.
- Season with salt and pepper if needed (and extra soy sauce).
