Ingredients

  • 140 g Caster Sugar (Superfine)
  • 200 g Plain Flour (All-Purpose Flour)
  • 1 tsp Bicarbonate of Soda (Baking Soda)
  • 70 ml Buttermilk (or 100ml natural yogurt)
  • 140 g Butter (melted and cooled)
  • 2 Eggs (large)
  • 1 Orange (zest only)
  • 200 g Mixed Dried Fruit
  • 150 g Marzipan
  • 200 g Icing Sugar (Powdered Sugar)
  • 1 Orange (2-3 tbsp of juice)
  • 80 g Mini Eggs

Method

  1. Preheat the oven to 190℃ (170 Β°fan/ Gas 5/ 375℉) and line a 12 hole muffin tin with paper cases.
  2. Mix together the flour, bicarbonate of soda, and caster sugar in a large mixing bowl.
  3. In another bowl, whisk together the melted butter (cooled), eggs, and buttermilk.
  4. Gently mix the wet ingredients into the dry ingredients until combined.
  5. Fold in the dried mixed fruit and orange zest.
  6. Split the marzipan into 12 equal pieces and roll into balls. Flatten down with the palm of your hand so you get a round disc that will fit inside the muffin case.
  7. Half fill the muffin cases with the muffin batter.
  8. Top each with a marzipan disc then spoon over the rest of the batter so it is equally distributed.
  9. Bake for 16-18 minutes until risen and golden. Place on wire rack to cool.
  10. For the icing, sieve the icing sugar into a bowl and mix with 2 -3 tbsp of orange juice. You want the icing to be quite thick so it sticks to the muffins, rather than runny. Spoon the icing over the muffins.
  11. Top with the mini eggs.
