Ingredients

  • 100 g Butter
  • 100 g Smooth Peanut Butter
  • 200 g Light Brown Sugar
  • 5 tbsp Honey
  • 1 tsp Vanilla Extract
  • 3 Ripe Bananas (mashed)
  • 360 g Oats

Method

  1. Preheat the oven to 180โ„ƒ (160โ„ƒ Fan/ Gas 4/ 350โ„‰) and line a 20cm (8 inch) square baking tin with nonstick baking paper.
  2. Place the butter, peanut butter, honey, and sugar in a saucepan and melt them together on the hob over low heat. Stir continuously to prevent the mixture from burning.
  3. Remove the pan from the hob and mix in the oats, mashed bananas, and vanilla extract. Stir until combined.
  4. Press the mixture into the prepared tin with the back of a spoon.
  5. Bake in the oven for 20-22 minutes until lightly golden. Remove from the oven, score the top of the flapjack with a sharp knife, and leave to cool completely before cutting into bars.
