Ingredients

  • 200 g Butter (melted)
  • 125 g Caster Sugar
  • 125 g Light Brown Sugar (or use dark brown sugar)
  • 2 Eggs
  • 2 tsp Vanilla Extract
  • 275 g Plain Flour
  • 100 g White Chocolate Chips
  • 180 g Mini Peanut Butter Cups (or use peanut butter chips)
  • 125 g Nutella (softened in a microwave for 10 seconds)

Method

  1. Preheat the oven to 180ยฐC (160 fan/ 350F/ Gas 4) and line a small brownie tin or 20cm square baking tin with baking paper.
  2. Beat together the melted butter, caster sugar and light brown sugar until pale and fluffy (this should take 3-4 minutes).
  3. Mix in the eggs.
  4. Add the flour and vanilla extract and mix until combined.
  5. Stir through the mini peanut butter cups and chocolate chips.
  6. Spoon the mixture into the prepared tin.
  7. Melt the nutella for 10 seconds in the microwave and dollop spoonful's onto the top of the blondie mix. Use a skewer to create swirls in the mixture.
  8. Bake in the oven for 30 minutes and allow to cool completely before cutting into squares. I recommend placing them in the fridge (1 hour) or freezer (30 minutes) to help them set and make cutting easier.
