Ingredients

  • 2 large baking potatoes (Maris Piper or King Edward work well)
  • 1 tbsp olive oil
  • ½ tsp sea salt
  • Optional toppings: butter, grated cheese, baked beans, tuna mayo, sour cream, chives

Method

  1. Wash and dry the potatoes thoroughly. Pierce each one several times with a fork.
  2. Rub the potatoes with olive oil and sprinkle generously with sea salt for extra-crispy skin. (This is optional, but I like to wrap each potato in tinfoil at this stage to make the air fryer baked potatoes nice and fluffy).
  3. Place directly into the air fryer basket and cook at 200°C for 50 minutes. Cooking times may vary depending on potato size—check they’re soft in the middle with a sharp knife. If using tinfoil, remove the potatoes after 50 minutes, take off the foil, and return to the air fryer for a further 10 minutes to crisp up the skin.
  4. When ready, cut open, fluff the inside with a fork and add plenty of butter. You can also add your favourite toppings for the ultimate easy lunch.
