Ingredients

  • 200 g frozen raspberries ((ยฃ1.75/3)=(ยฃ1.16))
  • 90 g white chocolate ((ยฃ0.98))
  • 500 ml (0% fat ) natural yogurt ((ยฃ0.89))
  • 1 tsp vanilla extract
  • 2 tbsp honey
  • 150 ml water

Method

  1. Start by adding the frozen raspberries into a medium saucepan. Add the water & honey and cook on a medium heat until you achieve a 'coolie' like consistency. Set aside in a bowl to cool.
  2. Next, melt the white chocolate in a bowl over boiling water.
  3. Combine the cooled raspberry sauce with the natural yogurt and vanilla extract in a mixing bowl and pour into in a 12 inch by 10inch tray. Then, add small spoonfuls of melted white chocolate across the tray. Using the other end of a spoon or spatula, drag the spoon through the white chocolate to form the funky swirls.
  4. Pop in the freezer for around 2-3 hours, or until firm. Slice into individual portions once frozen so you can take out individual slices and enjoy.
