Ingredients
- 1 tbsp olive oil
- 600 g chicken breasts, chopped
- 150 g smoked bacon medallions, chopped
- 1 medium onion, finely chopped
- 5 g garlic, finely chopped
- 100 ml vodka
- 400 g chopped tomatoes
- ¼ tsp salt
- 120 ml half-fat crème fraîche
- Freshly grated Parmesan cheese, to serve
- Fresh basil leaves, for garnish
- Salt and freshly ground black pepper, to taste
Method
- Heat the olive oil in a large pan on a high heat and fry the chicken for a few minutes to get some colour on it. Remove and set aside.
- Reduce the heat to medium and add the bacon and onion.
- Cook these for about 5-10 minutes to really allow them to release lots of flavour and to get the bacon to crisp up.
- Add the garlic and fry for a further 30 seconds.
- Add vodka and cook it for about 2-3 minutes. This is to allow the alcohol to burn off.
- Return the chicken to the pan and add the chopped tomatoes and salt.
- Cover and simmer for 10 minutes with the lid on. Then remove the lid and simmer for another 5 minutes.
- Add the basil and crème fraiche, a splash of pasta water if needed stir through and serve.
