Ingredients
- 1 tbsp oil
- 1 onion, chopped
- 1 pepper, chopped
- 500g 5% beef mince
- 15g garlic, puree or very finely chopped
- 1 tsp mixed herbs
- 30g red pesto
- 400g chopped tomatoes
- ½ tsp salt
- 100 ml water
- 80g low fat cream cheese
Method
- Heat some oil in a pan and cook the onion and pepper until they’re softened and smell amazing.
- Add the mince and cook it until it’s beautifully browned and slightly crispy. Trust me, don’t rush this step – it’s where the magic happens.
- Add the garlic and let it cook for about 30 seconds. Just long enough to make your whole kitchen smell incredible.
- Stir in the mixed herbs, red pesto, chopped tomatoes, salt, and water. Let it simmer for 10 minutes to thicken up and let the flavours meld.
- Just before serving, stir in the cream cheese until it melts into the sauce like a dream.
- Toss with your favourite pasta, sprinkle with parmesan (if you’re feeling fancy), and dig in.
