Ingredients

  • 2 Seasoned Frenched Rack of Lamb packages from Trader Joe's
  • 2 tablespoons lard or your fat of choice

Method

  1. Transfer your racks to the fridge 24 hours before you want to cook them. Set your water oven to 130ยฐF for medium rare chops.
  2. Once you're ready to cook the lamb, put the lamb into the water oven and let them cook for about 2 hours.
  3. Remove the lamb from the bath and dry them off with paper towels.
  4. Heat a couple tablespoons of lard in a large cast iron skillet over high heat and sear off each rack a few minutes each side.
  5. Slice them up and serve!
