Ingredients

  • ¼ cup soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar (or red wine vinegar or balsamic vinegar)
  • 2 teaspoons Worcestershire sauce
  • 3 cloves garlic (minced)
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 2 pounds sirloin steak (cut into 1 ¼ inch cubes)
  • 2 bell peppers (cut into 1-inch pieces)
  • 8 ounces mushrooms (sliced in half)
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1 large red onion (cut into 1-inch pieces (do not separate layers))

Method

  1. Soak your skewers in water for about 20-30 minutes to prevent them from burning on the grill.
  2. Marinate Steak: In a large bowl, whisk together soy sauce, olive oil, apple cider vinegar, Worcestershire sauce, garlic, salt and pepper. Add steak to the marinade, stir to coat, and marinate for at least 30 minutes and up to 24 hours.
  3. Add bell peppers and mushrooms to a bowl, drizzle with olive oil and season with salt and pepper.
  4. Thread Skewers: Thread marinated steak and bell peppers, mushrooms, and onion onto soaked skewers alternating the order of ingredients as you thread them.
  5. Preheat your grill to high heat. Clean and lightly oil the grill grates.
  6. Place the skewers on the grill. Cook for 4-5 minutes on each side, or until browned and the internal temperature reaches 145°F (63°C) for medium doneness.
  7. Allow to rest for a few minutes before serving.
