Ingredients

  • 2 tablespoons olive oil
  • 1 onion (finely diced)
  • 1 pound (450 grams) green beans (trimmed)
  • 1 tomato (diced)
  • 1 pound (450 grams) baby potatoes (halved)
  • salt & pepper to taste
  • 3 tablespoons water
  • lemon juice (for serving (optional))
  • parsley (for garnish (optional))

Method

  1. In a wok or pot, heat olive oil and cook the onion until it's soft and translucent.
  2. Add the green beans and shallow fry for a couple of minutes. Add the diced tomatoes, potatoes, and season with salt and pepper. Add the water or stock.
  3. Cover with a lid and simmer on low-medium heat stirring occasionally for 25 minutes or until the potatoes are fork-tender.
  4. If you're using a pressure cooker, then cover with the lid and cook on "high pressure" for 5 minutes. Quickly release the steam once the cooking is finished and serve.
  5. Serve with a splash of lemon juice, and garnish with chopped fresh parsley leaves.
