Ingredients

  • 100 g Cooked turkey (shredded)
  • 4 tablespoons Homemade BBQ sauce
  • 150 g Leftover vegetables (chopped)
  • 2 Soft flour tortillas
  • 40 g Light mature cheddar (grated )

Method

  1. Make the BBQ turkey: Mix 100 g of Cooked turkey (shredded) with 4 tablespoons of Homemade BBQ sauce until coated.
  2. Add to the tortillas: Divide the turkey mixture between 2 Soft flour tortillas, spreading it over one half of each.
  3. Add the veg: Divide 150 g of Leftover vegetables on top of the turkey, keeping the filling away from the edges.
  4. Add the cheese: Sprinkle 40 g of Light mature cheddar over the filling.
  5. Fold them over: Fold each tortilla in half and place in a large, dry non-stick frying pan over a medium heat.
  6. Cook: Cook for around 3-4 minutes on each side, turning carefully, until the tortillas are golden and crispy, the cheese has melted and the turkey filling is steaming hot all the way through. Cooking time will depend on the thickness and temperature of the filling.
  7. Serve: Cut into wedges and serve straight away.
