Ingredients

  • 130 g Plain flour (sieved)
  • 2 tablespoons Sugar
  • 1 tsp Baking soda
  • 1 Egg
  • 250 ml Skimmed milk
  • 1 tsp Vanilla extract
  • 25 g Butter (melted)
  • 100 g Blueberries (for the batter)

Method

  1. Put 130 g Plain flour, 2 tbsp Sugar and 1 tsp Baking soda into a large bowl and mix.
  2. In a smaller bowl, whisk 1 Egg and add 250 ml Skimmed milk, 1 tsp Vanilla extract and 25 g Butter (melted) and mix well.
  3. Pour the wet mixture into the flour mixture and gently stir to form a batter. Gently fold in 100 g Blueberries.
  4. Oil your waffle iron and pour half the mixture into it and close the lid. Cook according to your waffle iron instructions. Ours took around 3-4 minutes to cook. Repeat with the rest of the batter mixture.
  5. Serve with yoghurt or cream and extra blueberries on top.
