Ingredients

  • 240 g Courgette (zucchini) (grated and liquid squeezed out)
  • 2 Eggs
  • 65 g Plain flour
  • 1 tsp Baking powder
  • 1 pinch Fine sea salt and ground black pepper
  • 40 g Feta
  • 2 tablespoons Fresh mint (chopped)
  • 60 g Frozen peas (thawed)
  • 0.5 tablespoons Olive oil
  • Tzatziki ( for serving)

Method

  1. Grate 240 g Courgette (zucchini) and then squeeze out the excess liquid and discard (or add to green smoothies). Set the grated courgette aside.

  3. Add the grated courgette, 60 g Frozen peas, 40 g Feta and 2 tbsp Fresh mint and gently mix it in to form a batter.
  4. Heat 0.5 tbsp Olive oil in a pan and then add spoonfuls of batter to make fritters around 10cm (4 inch) in diameter. Fry for 2 minutes each side.
  5. Serve with Tzatziki.
