Ingredients
- 140 g Spaghetti
- 2 tablespoons Olive oil
- 2 Shallots (finely diced)
- 3 Garlic clove (crushed)
- 1 Lemon (juice and zest only)
- 80 g Spinach
- 160 g Sardines (canned)
- 7 g Fresh parsley (finely chopped)
- 1 pinch Fine sea salt and ground black pepper
- 1 tsp Chilli flakes ((less if preferred))
- 50 g Sun-dried tomatoes (chopped)
Method
- Cook 140 g Spaghetti according to the packet instructions - normally 10-12 minutes.
- Heat 2 tbsp Olive oil in a pan and cook 2 Shallots until softened, about 2 minutes.
- Add 3 Garlic clove and 1 tsp Chilli flakes. Stir and cook for a further minutes.
- About 2 minutes before the spaghetti is cooked, add 80 g Spinach to the water.
- Add 160 g Sardines, juice and zest of 1 Lemon, 7 g Fresh parsley, 50 g Sun-dried tomatoes and 1 pinch Sea salt and black pepper to the shallots. Gently stir to avoid breaking up the sardines too much.
- Drain the spaghetti and spinach, reserving a small amount of pasta water.
- Add the drained spaghetti, spinach and reserved water to the sardine mix. Mix well and serve.
